Raisin Bread

Ingredients:

FOR THE DOUGH:

1 cup milk, warm

2 tablespoons brown sugar

2 1/4 teaspoons instant rise yeast

6 tablespoons oil or melted butter

2 eggs

3 1/2 cups (500g) flour

1 teaspoon salt

1/2 cup raisins

FOR THE CINNAMON FILLING:

1/3 cup brown sugar

2 tablespoons ground cinnamon

3 tablespoons melted butter

Instructions:

1) Mix milk, brown sugar, and yeast in a bowl. Let sit 10 minutes until foamy.

2) Pour yeast liquid into mixer bowl and add oil and eggs. Whisk and add flour and salt.

3) Use dough hook to mix into shaggy dough. Add raisins then knead on medium low for 10 minutes.

4) Cover bowl with plastic wrap and let rise for 1 hour.

5) Flour countertop and stretch dough into a rectangle the size of your pan.

6) Make the filling by stirring it together. Spread it all over the top of the dough.

7) Roll the dough up tightly and place into loaf pan. Cover with plastic wrap and let rise for 30 minutes.

8) Preheat oven to 375 F, then bake for 40-50 minutes until inside is 190-200F.

9) Let bread cool completely on wire rack before slicing.
