Ingredients:
-3 1/2 cups all purpose flour +more for your work surface
-3/4 teaspoon baking soda
-1/2 tsp salt
-1 3/4 cups buttermilk
-1/2 cup raisins (optional)
-jam (optional)
-butter
makes 8-12 servings
1. Preheat oven to 425 F. Whisk together the flour, baking soda, and salt
in a large bowl. If you’re using raisins, stir them in now.
2. Create a pit in the middle of the flour mixture and pour the buttermilk
into it.
3. Stir everything together to form a dough.
4. Flour your hands and your work surface. Knead the dough a few times,
then shape it into a bowl. Add extra flour to the dough if it keeps
sticking to your hands.
5. Pat the dough down to flatten the ball into a mound, about 2 1/2 inches
thick. Cut a cross deep into the dough.
6. Line a cookie sheet with parchment paper. Bake the dough on the sheet
for 45-50 minutes, or until the crust is golden brown.
7. Wait for the loaf to cool, then slice it to serve. Spread it with
butter, and jam if you like, and enjoy!
