Ricotta Cheese
Ingredients are:
1 gallon of whole milk
1 teaspoon of citric acid
1 teaspoon of cheese salt
1-2 tablespoons of heavvy cream

Instructions Are:
1. Stir acid into 1/4 cup of the cool water
2. Add the acid and the salt into the milk and mix it all together
3. Heat the milk to 185-195 and stir often.
4. Turn off the heat when the cheese curds separate. And Leave the cheese curds alone for 10 minutes.
5. Strain the cheese curds though with a cheesecloth Hang the ccloth bag for 20-30 minutes to drain
6. Add the cream to the end if you wanted to.
