Almond joy brownies
Brownies
1/2 cup butter
6 ounces semi sweet chocolate
3/4 cup sugar
2 eggs
1 teaspoon vanilla
3/4 cups flour
1/2 teaspoon Baking Powder
Coconut filling
2 cups sweetened shredded coconut
1/4 cup icing sugar
1 cup sweetened condensed milk
1 teaspoon vanilla
1/4 cup almonds
Chocolate ganache
3/4 semi sweet chocolate chips
1/2 cup heavy cream
Preheat oven to 350. Line a 8″ pan with parchment paper
Brownies
In small bowl melt chocolate and butter until melted, and slightly cooled. Add sugar and eggs, and vanilla. Mix just to combined. Add dry ingredients, and stir until combined.
Pour batter into dish and bake for 25-30 minutes. Allow to cool.
Coconut filing
Once brownies have cooled, in med sized bowl combine sweetened condensed milk, coconut, powdered sugar, vanilla, almonds. Mix until everything is incorporated. Spoon onto brownies
Ganache
Heat cream in microwave. Add chocolate chips, let sit for 1-2 minutes. Whisk until it thickens and is smooth. Pour over coconut layer and cool for 2 hours. Enjoy!
